I am going to break your question into parts.

> How do I know that after being saved and baptized that I am sealed

The number one sign that you are sealed with the Holy Spirit is
that you are right now trusting Jesus as your Lord and Savior. No
one can do this without the seal. The seal comes with salvation.
And the sign of salvation is that you truly love Jesus.

> I do know my convictions for the things I've done in the past are
> stronger. Sex was my weakness at one point. Now, I have no desire at
> this time for a relationship or sex. The only desire I have is just to
> make the Lord the center of my life. I desire nothing outside of Him.

You are describing a person who has repented, and truly loves the
Lord. A sinner prefers other things rather than the Lord.

> I have yet to experience speaking in tongues, which is one of the many
> gifts of the Holy Spirit. But, someone told me me... and also, I
> believe my pastor (if I interpreted him correctly) said that if how
> you used to live has changed and your convictions for the things you've
> done in sin are stronger, the Holy Spirit has sealed you.

> Is this so? How will I know?

Your pastor is absolutely correct. Speaking in tongues is simply a
gift. It should never be stretched beyond its Biblical perimeters.
Speaking in tongues was never intended to be a salvation sign, or
even a sign that a person is living a Spirit-filled life.
